collation_server = utf8mb4_unipre_ci

is not correct, change to:

collation_server = utf8mb4_unicode_ci

you see the error if you start mysql dirctly with

/usr/sbin/mysqld

Did you encounter issues when setting up the production? You should check /etc/nginx/conf.d/ if the configuration file “frappe-bench.conf” is present.
